MERLOT
Typically, Merlot is a dry, medium- to full-bodied wine with moderate acidity, moderate to high alcohol, and soft but present tannins. The best Merlot taste has a range of flavours, ranging from graphite, herbs and blackberries, to black cherries, plums, and cocoa, often layered with notes of clove, vanilla, and cedar when aged in oak.

Cabernet Sauvignon, often referred to as the “King of Red Wine Grapes”, is a full-bodied, acidic wine with strong tannins, high alcohol and made from an international red wine grape variety. Sonoma County, California | The profile hews more to the darker fruit expression including plums & blackberry. There is depth of flavour across the mid palate (density) but it is not fat or fleshy. A few anise & bark notes peek out in the finish along with some floral notes from a touch of whole cluster.

Burgundy, France | The 2018 Nuits-Saint-Georges Les Cailles 1er Cru offers good depth, energy and intensity, even if some rough contours remain. With a little more fruit depth, the Cailles could be a more complete wine. Maybe some of that will come in time. This is another wine in the range that comes across as not fully formed today, perhaps of the late malolactic fermentations.
2018 MAISON CAMILLE GIROUD CHARMES-CHAMBERTIN GRAND CRU
Burgundy, France | Produced from a parcel of old vines which always produce tiny, concentrated millerand grapes, Carel uses 100% whole-bunch to lift the floral aromas and provide some structure to the finish. The nose is spicy and expressive, with peony & rose petal aromas, while the palate is packed with dense crushed-strawberry fruit, subtle sweet spice & chalky, fine-grained tannins. Three barrels were only made for the vintage year of 2018.
SHIRAZ or SYRAH
Shiraz are opaque, ruby-purple in hue, and offer concentrated jammy aromas and flavours of blueberry and blackberry, along with big, ripe tannins. Smoked meat notes like beef jerky and bacon along with black pepper spice, are also characteristic. Alcohol levels tend to be higher, as are degrees of oak use and oak aging.

South Africa | The nose is bold and complex, offering an abundance of dark plums, violets, cured meat and black olives. The perfume of the nose follows through onto the palate with notes of liquorice, aniseed and allspice. Sonoma Coast, California | Aromas and flavours of smoked meat, white pepper, green olive & grapefruit, coupled with a silky texture and savoury flavour. The 2017 vintage is comprised of 50% Cole Creek Vineyard and 50% Rodgers Creek Vineyard. Cole Creek boasts very gravelly Felta clay loam and Rodgers Creek has volcanic Kidd series gravelly loam.
MALBEC
Malbec wine is known for its deep purple colour and full body, grapes are small and dark in colour with very thick skins, producing a wine that has rich fruity flavours with higher alcohol and medium tannin levels. Originally planted in France, Malbec is now the most widely-planted grape in Argentina.

The wine has great aromatic intensity, displaying wild blueberry combined with quince notes and spices. Very well balanced, with deep flavours and structured tannins, it has superb ageing potential.

California, USA | This dark ruby coloured Zinfandel from Caymus opens with a boysenberry and cherry-cola bouquet with hints of cranberry, pine resin, and black plum. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is nicely balanced, smooth, lush, and nicely coats your mouth. The flavour profile is stewed black plum, milk chocolate, and boysenberry blend with notes of Earl grey tea and pomegranate. We also detected hints of red cherry, white pepper, subtle graphite, and mild oak. The finish is dry, and its well-managed moderate polished tannins are nicely extended.

2022 FRESCOBALDI RÈMOLE TOSCANA IGT
Tuscany, Italy | Beautiful purple-red colour. On the nose, it manifests itself with its fruity character, intense hints of red & black fruits, small berries such as blueberry, blackcurrant, raspberry, and ripe fruits such as plum and cherry. It has a rare and delicate scent of wild arbutus. Licorice and cardamom define the spicy & balsamic character of Remole rosso. Pleasant on the palate, with a fine persistence and taste-olfactory response. The tannic texture is solid but very smooth.
2021 FRESCOBALDI CASTIGLIONI CHIANTI DOCG
Tuscany, Italy | Vibrant ruby red colour. Pleasantly fruity wine on the nose, with notes reminiscent of redcurrant, raspberry, morello cherry and wild strawberry. A beautiful floral sensation on the finish is accompanied by spicy hints of clove. Lively and fresh on the palate with pleasant but never overwhelming tannins. The lovely finish is long, crisp and delicate.

Burgundy, France | The 2018 Nuits-Saint-Georges Les Cailles 1er Cru offers good depth, energy and intensity, even if some rough contours remain. With a little more fruit depth, the Cailles could be a more complete wine. Maybe some of that will come in time. This is another wine in the range that comes across as not fully formed today, perhaps of the late malolactic fermentations.

The palate is medium-bodied with fine tannin that cloak its sweet core of cassis & blackcurrant fruit.
